The Dandy Hospitality Group is based in the Nomad area of Manhattan and is focused on creating high quality cocktail and culinary destinations that are approachable, fun and satisfying. The Ivory Peacock is looking for a Chef de Cuisine to work alongside the Executive Chef to oversee all of the Ivory Peacock's culinary operations.

The Ivory Peacock is a 8,000 square foot cocktail-driven bar and restaurant with small plates that are Japanese & French inspired menu with a beautiful raw bar program, a tasting menu experience and rich, familiar flavors from both France and Japan formulated from seasonal ingredients and the freshest produce - all that pair perfectly an extensive spirits collection.

The two-level space features a social club lounge below that will operate as a post-dinner destination below the primary bar and dining experience.

The Ivory Peacock, is looking for energetic & passionate Chef de Cuisine to join the opeing team. The Ivory Peacock seeks to redefine the scope of French & Japanese cuisine and offers the culinary team the opportunity to work with quality Japanese cuisine & wine/spirits, a respectful, safe, professional work environment, and a management team uniquely invested in the growth and success of all team members.

Responsibilities include:

  • Serve as the leader of our talented and diverse culinary team and restaurant, preparing and executing the menu at direction of Corporate Executive Chefs with utmost quality and precision
  • Learn and handle the various stations (garde manger, pasta, grill, saute, pastry), which includes preparing and cleaning stations properly, stocking stations adequately for service, and communicating actively with colleagues to facilitate smooth and efficient kitchen
  • Work and expedite in a high volume and intensity kitchen and work environment and be able to handle rigors of busy services while maintaining quality and consistency
  • Support other areas of the kitchen as needed, and be able and willing to assist teammates in the kitchen as needed, including handling duties of other stations
  • Maintain clean restaurant and adhere strictly to all COVID-19 health and safety standards

Requirements include:

  • At least 2 years of relevant restaurant experience preferred
  • Considerable working knowledge of relevant food preparation
  • Genuine passion for cooking, restaurant hospitality and learning new skills
  • Highly organized, productive, and able to work meticulously in a high-intensity kitchen / work environment
  • Energetic and friendly personality, with strong willingness and ability to work as part of a cohesive team and to support colleagues regardless of role
  • Willingness to take direction from the Executive Chef, embrace change and innovation, and to learn and adapt to new systems, service steps and health and cleaning procedures
  • Broad and flexible availability to work – AM/PM service and prep/production
  • Proficient in all standard ordering, inventory, POS systems, Microsoft office, computers
  • Possess all New York mandated food safety certifications
  • Experience in managing and maintaining all DOH food safety standards, requirements, policies and systems to adhere to them
  • Experience in following all NYS labor responsibilities, laws, requirements, regulations and policies

Physical Demands:

  • Must be able to stand, lift and bend for extended periods of time
  • Must be able to bend and lift to 50 lbs.
  • Role may include job duties or tasks requiring repetitive motion, movement and navigation throughout a bilevel venue
  • Exposure to hot kitchen elements, raw foods, and/or cleaning materials.
  • Must be able to remain focused in a fast-paced and ever-changing environment.
  • Ability to work a flexible schedule inclusive of varying shifts such as days, evenings, weekends and holidays
