We are looking for an experienced Executive Pastry Chef to lead our pastry team and oversee the seasonally driven pastry & dessert program in our busy, fast-paced third-wave café and artisan bakery (with a second location & production kitchen opening soon). The ideal candidate will be an organized, production focused, collaborative and innovative pastry chef with a terrific attitude and a passion for producing high-quality organic pastries & desserts. Job Responsibilities:

  • Executing established core sweet and savory pastry and dessert menu for Stellina Pronto and Stellina Cucina. Additionally, developing new, seasonal, holiday, and thematic recipes and menus that complement the overall food concept
  • Daily production of all pastry menu items, including but not limited to viennoiserie, sweet and savory pastries, and desserts
  • Lead, supervise, and manage a team of 15-20, ensuring that all employees are properly trained and working efficiently to meet production goals
  • Work with FOH to establish and meet pars
  • Daily quality checks of products
  • Management of inventory, ensuring that ingredients and supplies are stocked in a timely manner
  • Management of all ordering and acceptance of daily deliveries and ability to keep things within set cost margins with suppliers
  • Management of organization of kitchen, including organization and cleanliness of dried storage, walk-ins, and dairy fridge
  • Management of budgets and finances for the pastry department, including labor costs, inventory expenses, and other overhead costs
  • Establish relationships with vendors to ensure the highest quality ingredients are procured and to negotiate pricing to meet budgetary goals
  • Maintain high food quality and hygiene standards, ensuring that all food produced by the pastry team meets the high standards set by the restaurant and adheres to strict hygiene and food safety regulations
  • Collaborate with other departments, such as the front-of-house team and chef/owner, to ensure that the overall customer experience is exceptional
  • Handle daily scheduling and hours and management of payroll
  • Management of interviewing, hiring, training and reviewing of BOH staff
  • Management and execution of pastry and desserts for catered and special events
  • Attend certain outside events and programs with possible travel

Job Requirements:

  • At least 4 years’ experience in a restaurant or bakery with a focus on pastry, with at least 2 years in a leadership role
  • A strong background in pastry production and knowledge of pastry techniques and trends
  • Proficient in both laminated and yeasted doughs; knowledge of how to work with a dough sheeter and depositor a plus; knowledge of pizza dough production a plus
  • Strong leadership and management skills, with the ability to motivate and supervise a team
  • Excellent communication skills, with the ability to collaborate effectively with other departments and vendors
  • A genuine passion for producing high-quality sweet and savory pastry and desserts that utilize local, seasonal and organic ingredients, and an ability to work well under pressure
  • Strong organizational skills, with the ability to manage inventory and finances effectively.

Job Type: Full-time

Pay: $80,000.00 - $90,000.00 per year
