The Director of Dietary Services duties are to identify resident dietary needs, plan, organize, develop, implement and direct the individual dietary programs and overall operations of the Dietary Departments within the Corporation in accordance with current, federal, state and local standards, guidelines and regulations governing our facility, our established policies and procedures, to assure that quality food service is provided at all times. To provide not just a compliant meal program, but to offer a Dining Experience to all residents, staff and visitors as necessary.
Requirements
Administrative Functions:
1. Plan, develop, organize, implement and evaluate dietary systems, programs and activities, within the corporation in coordination with the Dietary Supervisors and Administrators.
2. In coordination with the Dietary Supervisors, coordinate dietary services and activities with other related department(s) i.e. Nursing, Housekeeping, Social Services, etc.
3. Develop and maintain written dietary policies and procedures.
4. Keep abreast of economic conditions/situations and recommend to the Administrators adjustments in dietary services that assure the continued ability to provide daily dietary services.
5. In cooperation with the Dietary Supervisors,, review and develop a plan of correction for dietary service deficiencies noted during survey inspections and provide a written copy of such to the Administrators for approval.
6. Develop, implement and maintain an ongoing quality assurance programs, including resident satisfaction surveys, for the Dietary Departments, within the Corporation.
7. Inspect food storage rooms, utility/janitorial closets, etc. for sanitation, compliance, and supply control on a routine basis.
8. In coordination with the Dietary Supervisors, assist in the preparation and planning of the dietary department’s budget for food, equipment, supplies, vendors and labor, and submit to the Administrators for review, recommendations and approvals.
9. Maintain current written records of department expenditures and assure that adequate financial records and reports are submitted to the Administrators upon request or as necessary.
10. Monitor and participate in monthly resident food council meetings throughout the corporation.
Clinical Functions:
1. Oversee the development of all resident diet plans and menus as prescribed by the attending physician, in coordination with the Registered Dietician. Dietary Director and RD to sign and initial all menus and production spreadsheets.
2. Coordinate Nutrition at Risk meetings with RD’s, and DNS of each building, to ensure that the interventions are appropriate and compliant.
3. Ensure that dietary personnel are aware of the care plan and that care plans are used in planning daily dietary services for the residents. Coordinate with all Dietary Supervisors, to go over new care plans
Personnel Functions:
1. Develop and maintain an excellent working relationship with inter-department personnel as well as with other departments within the corporation to assure food service can be properly maintained to meet the needs of the residents. Oversee Nutrition assessments, to ensure accuracy, efficiency, and follow- through within all of the departments.
2. Create and maintain an atmosphere of positive collaboration within departments, and ensure that the environment provides the tools necessary to provide excellent Nutrition care and a pleasant dining experience for all residents
3. Assist in determining the dietary staffing requirements necessary to meet the Dietary Department’s needs, in coordination with the Dietary Supervisors.
4. Assist in establishing food service production lines, etc., to assure that meals are prepared on time in coordination with the Dietary Supervisor
5. Recommend adjustments/corrections related to competence of dietary personnel.
6. Assist Dietary Supervisor in recruiting, interviewing, selecting dietary personnel and disciplining dietary personnel.
7. Monitor and participate in new employee orientation and training. Actively participate in ongoing training, to ensure the dietary personnel meet requirements, and learn new regulations as they occur.
Dietary Service Functions:
1. Plan, develop, implement and evaluate seasonal menus, standardized recipes and holiday menus in coordination with the Dietary Supervisor.
2. Routinely inspect diet trays to assure they are meeting established guidelines.
3. Act as a consultant/resource for the Dietary Supervisor in the day-to-day operations of the Dietary Departments.
Safety and Sanitation Functions:
1. Make regular inspections to assure that the departments are safe, sanitary and consistent with the State and Federal guidelines. Stay educated and informed of industry “best practices” and possible regulation changes before they occur.
2. Observe infection control procedures and universal precautions when performing daily tasks.
3. Routinely monitor cleaning procedures of dietary departments. Develop cleaning schedules to be used in each kitchen.
4. Assure that department personnel, in accordance with our fire safety policies and procedures, maintain fire protection and prevention programs.
5. Routinely monitor that all dietary personnel wear protective clothing/devices when performing tasks that involve the handling of infectious waste and/or blood/body fluids.
6. Dispose of all food and waste in accordance with established policies and procedures.
7. Others duties as may become necessary/appropriate to assure that our facility is maintained in a clean, safe and comfortable manner.
Specific Requirements:
- Must be a Certified Dietary Manager with 5+ years experience in residential healthcare setting
- Must possess at least a bachelor’s degree in Nutrition or Healthcare from an accredited College or University or equivalent experience
- Must be knowledgeable of dietary practices and procedures as well as the laws, regulations and guidelines governing dietary functions in the long-term care facility, assisted living, and skilled Nursing.
- Must possess the ability to make independent decisions when circumstances warrant.
- Must be able to read, write, speak and understand the English language.
- Must function independently and have flexibility, personal integrity and the ability to work effectively with residents, personnel and support agencies.
- Must have patience, tact, cheerful disposition and enthusiasm, as well as be willing to incorporate them into existing practices.
- Must have the ability to plan, organize, develop, implement and interpret the programs goals, objectives, policies, procedures, etc. of the Dietary Department.
Physical Requirements:

- Must possess sight/hearing senses or use prosthesis that will enable these senses to function adequately so that the requirements of this position can be fully met.
- Must be able to cope with the mental and emotional stress of the position.
- Must be in good general health and demonstrate emotional stability.
- Must be able to lift, push, pull and move a minimum of 50 pounds on a frequent basis.
- Must be able to stand and walk for extended periods of time.
- Must be able to relate to and work with ill, handicapped, elderly, emotionally upset and at times, hostile people within the facility.
- Must be able to taste and smell food to determine quality and palatability.
- Must be able to withstand extreme hot and cold temperatures in the work area.
