As our Kitchen Operations Manager, you will lead our hard-working Stewarding team to ensure our kitchen is impeccable, properly stocked with necessary equipment and thoroughly aligned with our sustainability initiatives.

What you will be doing:

• Ensure the overall cleanliness, organization and maintenance of our kitchen areas, equipment and tableware exceeds expectations by closely collaborating with the senior chefs, conducting daily and weekly inspections with appropriate leaders and vendors.
• Establish, implement and maintain a deep cleaning schedule for kitchen areas on property including all walk-ins and coolers
• Oversee the fulfilment of the contract between the resort and our third-party cleaning service provider by performing weekly walk-throughs and partnering with their supervisor.
• Ensure the safe transportation of all food items to banquet functions by coordinating with the banquets department
• Recruit, motivate, coach, and discipline Stewarding colleagues
• Effectively train, evaluate and promote the growth and development of internal talent by holding one-on-one meetings and completing performance reviews in accordance with company guidelines.
• Conduct daily briefings, implement, oversee and follow up on all sanitation standards and procedures
• Accurately schedule, process payroll and submit personnel forms the department colleagues.
• Work alongside our Executive Sous Chef to track food waste and exceed our food waste initiatives
• Coordinate proper maintenance and ensure safe use of restaurant and kitchen equipment to provide maximum output and a safe work environment
• Oversee and maintain the supply of necessary equipment for the Food & Beverage Division
• Order and stock cleaning chemicals and other departmental supplies.
• Organize and maintain par levels of all Food and Beverage Department China, Glassware, Silverware and Acrylics by implementing an efficient ordering process, submitting AFEs/purchase orders, participating in regular inventory and working closely with Food & Beverage Managers on their needs.
• Develop & oversee the Comprehensive Action Plan based on results from the Annual Employee Engagement Survey
• Maintain the safety and sanitation in the kitchen, restaurant and storage areas in adherence to local Health Department, EcoSure, Serve Safe and COVID-19 health and safety guidelines
• Partner with Ecolab representative on equipment maintenance, equipment usage, chemical supply and all pest control-related items
• Maintain accurate temperature and cleaning logs per EcoSure and Department of Health Standards
• Organize/Maintain all Food & Beverage storage areas
• Manage labor and operating expenses through effective scheduling, budgeting, purchasing, and inventory

Your experience and skills include:

• High school diploma or equivalent or vocational training
• Minimum one year leadership experience required
• Tuberculosis Clearance
• ServSafe Certification
• Service focused personality with the ability to multi-task is essential
• Proven ability to build and maintain good relationships with all stakeholders
• Communicate thoughts, actions and opportunities clearly with strong networking skills
• Ability to lead by example, believe in a strong team culture and set the scene for high performance
