POSITION HIGHLIGHTS

  • First shift, 7:30 AM - 4:00 PM, Monday through Friday
  • Conveniently located at our administrative Central Office in Wethersfield, CT with some occasional travel to Correctional Facilities to meet with offenders. Please note, this is an on-site/in-office position.

YOUR ROLE

This position will allow a dedicated, experienced, and creative candidate to provide significant impact to the underserved population that make up many of the vulnerable offenders within our system. This position is within the Food Services Unit and reports directly to the unit Director.

This is a multifaceted role that will encourage the collaboration between the Department's Food Services and Nutrition Unit and Health Services. As a Dietitian at the DOC, you will have the opportunities to:

  • Develop, plan and perform nutritional analysis of the Department’s Master Menu, Common Fare Menu, Male and Female Youth Offender Menus, Physician-ordered Therapeutic Diet Menu, Religious Diet Menu and Offender Holiday Menu;
  • Develop and implement specialized offender diets as required. Specialized diets include, but are not limited to, gluten free, texture modified, allergen restricted, etc.;
  • Assist in the investigation of offender food service issues and possible litigation;
  • Serve as an expert witness consultant to the Department and the Office of the Attorney General, as necessary;
  • Customize offender patient care plans and nutrition assessments to ensure proper nutrition compliance, food protection and food safety compliance;
  • Develop and implement offender educational sessions designed to educate offenders on proper nutritional requirements, diabetic nutrition, and nutrition for male and female youth offenders, including dietary consults; and
  • Assist the Department in investigations regarding food service grievances filed by inmates, and periodically respond to inmate requests regarding nutritional and food service safety concerns.

PURPOSE OF JOB CLASS (NATURE OF WORK)

In a state facility or region this class is accountable for independently planning and coordinating the delivery of nutritional and food services to individuals in order to render optimal nutritional health.

EXAMPLES OF DUTIES

  • Assist in the investigation of offender food service issues and possible litigation; approval of the Department’s Inmate Master Menu as developed by the Department’s Food Service and Nutrition Unit; provide technical assistance regarding nutritional and diet issues for all correctional facilities and technical compliance regarding the American Correctional Association, Standards for Administration of Correctional Agencies and the National Commission on Correctional Health Care (specific to female offenders at York Correctional Institution).
  • Develop, plan and perform nutritional analysis of the Department’s Master Menu, Common Fare Menu, Male and Female Youth Offender Menus, Physician-ordered Therapeutic Diet Menu, Religious Diet Menu and Offender Holiday Menu.
  • Collaborate with the Department’s Food Service and Nutrition Unit to develop and implement specialized offender diets as required. Specialized diets include, but are not limited to, gluten free, texture modified, allergen restricted, and any other deemed necessary by the Correctional Health Care unit.
  • Collaborate with the Department’s Food Service and Nutrition unit and Correctional Health Services staff in regard to offender patient care plans and nutrition assessments to ensure proper nutrition compliance, food protection and food safety compliance. This will include periodic review of specific offender medical charts and consultation on the development of individualized offender diet plans.
  • Collaborate with the Department to develop and implement offender educational sessions designed to educate offenders on proper nutritional requirements, diabetic nutrition, and nutrition for male and female youth offenders. This may periodically include instruction of such sessions and individual dietary consults as necessary.
  • Serve as an expert witness consultant to the Department and the Office of the Attorney General as necessary. Such services will include deposition, interrogation, affidavits, and trial testimony in defense of the Department’s meal provisions and nutritional requirements for offenders.
  • Assist the Department in investigations regarding food service grievances filed by inmates, and periodically respond to inmate requests regarding nutritional and food service safety concerns, as well as assist the Department’s Food Service and Nutrition Unit in its response to Freedom of Information requests regarding Department nutritional matters; maintains records and prepares reports.


Additional duties may include: Performs nutrition assessment, diagnosis, intervention, monitoring and evaluation; evaluates nutritional, psychological and cultural needs of individuals and plans dietary care accordingly; reviews medical history for conditions impacting dietary needs; develops and implements individualized nutritional care plans for assigned caseload; monitors and documents individual diet and weight changes; plans regular, therapeutic and special diet menus for individuals; orders and checks food items and kitchen supplies; supervises food preparation in residences and dietary department; consults on care and maintenance of kitchen supplies and dietary equipment; monitors food processes and sanitation procedures and recommends alterations as appropriate; provides nutrition and/or food service consultation and education to individuals, staff and family members; records pertinent nutrition information in medical records; maintains diet manuals; ensures nutritional services comply with relevant federal and state standards; oversees service of meals in dining rooms, cafeterias, cottages or other units; trains food service and direct care staff in the purchase, preparation and service of food according to dietetic principles and within a predetermined food budget; maintains records and prepares reports; performs related duties as required.

KNOWLEDGE, SKILL AND ABILITY

Knowledge of relevant state and federal laws and regulations; knowledge of food values and dietetic principles; knowledge of human physiology; knowledge of principles and practices of food production and services; knowledge of Joint Commission regulations and standards; interpersonal skills; oral and written communication skills; ability to independently plan and coordinate the delivery of nutritional services; ability to utilize computer software.

MINIMUM QUALIFICATIONS - GENERAL EXPERIENCE

Registration as a Registered Dietitian (RD) through the Commission on Dietetic Registration and certification as a Dietitian issued by the Connecticut State Department of Public Health in accordance with Connecticut General Statutes Section 20-206n and 20-206r.

SPECIAL REQUIREMENTS

1. Incumbents in this class must possess and retain registration as a Registered Dietitian (RD) through the Commission on Dietetic Registration.
2. Incumbents in this class must possess and retain certification as a Dietitian issued by the Connecticut State Department of Public Health in accordance with Connecticut General Statutes Section 20-206n and 20-206r.
3. Incumbents in this class may be required to possess and retain a valid Motor Vehicle Operator’s license.
